What better way of keeping our mind in the present moment (when we can’t be anxious) than making delicious pancakes on Pancake Day. Whether you are making them just for yourself or for your family they are so simple and so worth the tiny bit of effort that it takes!
My latest indulgence was pancakes topped with melted orange chocolate and fresh orange slices. Absolute heaven to taste and I thoroughly enjoyed making them too. Just mix the ingredients, then add a little of the batter to your frying pan (lightly coated with oil), turning it around until your pancake is lovely and round, watch as the little bubbles form on the top, turn over and repeat then top with whatever you fancy.
A great way to nurture yourself, top up your vitamin C for the day and take your mind to another dimension. I hope you enjoy too. Happy Pancake Day.
Ingredients for 3 people (no dairy recipe): 300g SR flour, 1 tsp baking powder, 1 tbsp sugar (any), 1 tsp vanilla extract, 400ml any plant based milk and 1 tbsp oil for cooking.
