I absolutely love beetroot whether it is grated raw, roasted or in the ultimate chocolate cake as a real treat! When I saw a recipe for a beetroot and coconut curry I just had to make it and I have to say it is absolutely delicious – light on the spice front with a beautiful sweetness to it too. I added some extra chick peas and spinach.
As well as tasting absolutely fabulous it also helps to keep the base chakra (energy centre) open too!
What new recipes will you be trying this Autumn?

I love using seasonal fresh produce and trying some new recipes as we change from one season to another. I’ve just made a new recipe of Beetroot, Lentil and Mint Salad with fried Halloumi and I have to say it was absolutely delicious so I thought I’d share it with you too.
Did you know that beetroot symbolises passion, love and beauty and is sacred to the Greek goddess of love, Aphrodite? In Greek mythology, Aphrodite ate beets to enhance her appeal and this folklore actually has a basis in reality as beets are a natural source of tryptophan and betaine, both substances of which promote a feeling of well-being.
Eating beetroot (along with other similar colour foods) helps to keep both your base chakra (located in the base of your spine and tailbone area) and heart chakra open. It also helps to ground us to the Earth energies which gives us a sense of stability and safety in our physical body and also assists us to be more focussed too.
If you would like the recipe please find it below. I hope you love it as much as I did.

Meanwhile if you have any delicious new recipes do share them too!
Wishing you a great day.
